2011 Oscars

This year's Oscars were great, thanks to my mom and sister for coming over and enjoying the night with me.  I love a theme party, dinner, really anything themed is fun and I can really get into the planning.  I didn't do any theme decorations this year, just concentrated on the menu.

Chicken Dinner

After a bad day, nothing makes me feel better than to cook for a couple hours.  After a stinky situation, I decided to head home and start cooking.  The result: roasted chicken, sweet potato casserole, stuffing and corn muffins.  It was very good and the gravy was one of the best yet!

Valentine's Day-Lady & The Tramp Style!

I had a great Valentine's Day this year thanks to my honey!  I had a great start with an Edible Arrangements delivery with fresh fruit and chocolate covered strawberries :)  I appreciate his out of the box thinking on this one! 

I made dinner, comfort food queen style as usual.  Grilled cheese on thick sourdough bread with a mix of American, Provolone, Muenster and Pepper Jack cheeses, with some french fries and a little steak and veggies. 

To finish it off, I made a Spaghetti & Meatballs cake for dessert.  I thought of any day to make a cake like that, it was Valentine's Day to imitate Lady & The Tramp.  However, we did not meet in the middle of a strand of frosting spaghetti! 

The recipe from this cake was in this month's issue of Food Network magazine.  It was super easy to make.  I will post the recipe soon.

Early Valentine's Day!

My mom is making homemade pizza tonight and I've decided to make an early Valentine's Day treat.  White cake with Dark Chocolate Ganache frosting.  I hope everyone likes it! :)









Recipe:

Make Cake:

  • 1 boxed cake, flavor of your choice
  • Eggs, oil & water based on box directions

Prepare cake according to box directions.  Bake in desired greased pans.  Let cool completely. 

Make Frosting:


  • 2 cups heavy cream
  • 1/2 cup confectioners' sugar
  • 1/8 teaspoon salt
  • 1 pound bittersweet chocolate, roughly chopped
  1. In a large saucepan, bring 2 cups heavy cream, 1/2 cup confectioners' sugar, and 1/8 teaspoon salt to a boil. Remove from heat; add 1 pound bittersweet chocolate, roughly chopped, and let stand, without stirring, for 1 minute. Whisk just until combined. Refrigerate, stirring occasionally, until spreadable, about 1 hour.

Decorate however you like!  Use sprinkles, other frosting piped around the edges or on top.

Comfort food at it's best...

Well, I finally chiseled most of the ice off my car so I could make a market run to pickup cat food and a few other items.  Very excited to find the Chiobani yogurts 10/$10 and happy to try the new mango flavor and black cherry as well.  While shopping I decided the most comforting meal tonight would be a nice bowl of hot soup.

After a quick stop to my mom's for a few slices of homemade bread, I got started on my white cheddar and broccoli soup.  It was a great meal and will make for an even better lunch at work tomorrow when I am finally among other people!  Working from home is only fun for a short time.  Hopefully the snow will hold off for a while.

White Cheddar Broccoli Soup


Meet Murray, one of my 2 starving kitties I ventured out in the ice to get food for!  He's so cute, he just hung out in the kitchen while I made my soup.  He never eats people food, but loves to be around when you're cooking it!

This winter has been terrible to say the least.  Let's hope the groundhog was right and we'll be seeing spring in 46 days.  However, I don't know if I can wait that long! 

Working from home can be great, but not being around people all day can make me a little crazy!  I decided to bake last night and send the goodies to work with my honey. 




I hope you enjoy these recipes:

Peanut Butter Brownies:


  • 1 box brownie mix
  • Eggs, water, oil (measurements depend on brand of mix)
  • 4 oz cream cheese, softened
  • 1/2-3/4 cup smooth peanut butter
  • 1/4-1/2 cup milk
  • 1/4 cup chocolate chips/chunks
  • 1 package king size peanut butter cups, chopped

Make brownie mix according to package instructions.  Pour into a greased 9x13 baking pan. 

Mix softened cream cheese and peanut butter.  Stir in milk (1/4-1/2 cup)until mixture is loose enough to swirl into brownie mix, use your judgment.

Using a tablespoon, drop peanut butter mixture on top of brownie batter in pan.  Using a butter knife, swirl peanut butter mixture and batter together.  Top with chocolate chips/chunks and chopped peanut butter cups. 

Bake according to package instructions (Generally 28-30 minutes).  Test brownies and continue to cook in increments of 5 minutes until done.  




The next recipe is a delicious and extremely QUICK and EASY recipe from Martha Stewart.  It is great cut into squares and lightly dusted with powdered sugar.  If you're feeling very indulgent, melt some chocolate and drizzle it across the top of baked and cooled cake in pan.  Let chocolate set before cutting into squares.


NY Crumb Cake
Makes one 9-by-12 1/2-inch cake (I use a 9x/13 pan and it comes out just fine!)
  • 2 tablespoons canola oil, plus more for pan
  • 4 cups all-purpose flour, plus more for pan
  • 1/2 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 2 teaspoons pure vanilla extract
  • 1 cup packed light-brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup (2 sticks) unsalted butter, melted and cooled
  • Confectioners' sugar, for dusting

  1. Place rack in center of oven, and heat oven to 325 degrees. Lightly brush a 9-by-12 1/2-inch baking pan with canola oil, dust with flour, and tap to remove excess. Set aside. In a medium bowl, sift together 1 1/2 cups flour, granulated sugar, baking powder, and salt; set aside. In a second bowl, whisk together egg, milk, canola oil, and vanilla. Using a rubber spatula, fold dry ingredients into egg mixture.
  2. Spread batter evenly into prepared pan, and set aside. In a medium bowl, combine remaining 2 1/2 cups flour, brown sugar, and cinnamon. Pour melted butter over flour mixture, and toss with a rubber spatula until large crumbs form. Sprinkle crumbs over batter.
  3. Transfer pan to oven, and bake, rotating pan after 10 minutes. Continue baking until a cake tester comes out clean, about 10 minutes more.
  4. Transfer baking pan to a wire rack to cool. Dust with confectioners' sugar. Using a serrated knife or bench scraper, cut into 3-inch squares. Store in an airtight container for up to 3 days.
